| Choc Peanut Butter Cookies |

These cookies are really quick to make and taste great. The perfect sugar hit when you need it! If you're not a fan of peanut butter, use 1/3 cup chopped walnuts or macadamia nuts instead.
1/4 cup vegan margarine 1/4 raw sugar 1/2 tsp vanilla essence 1/3 cup crunchy peanut butter 1/2 cup vegan dark chocolate roughly chopped into small pieces or choc chips 1 cup plain flour Pinch of sea salt 1/2 tsp bi carb soda 1/4 cup soy milk 2 tbl water
1. In a bowl, mix the margarine, sugar and vanilla essence together with a wooden spoon. 2. Stir through peanut butter then add flour, salt and bi carb and mix through. 3. Add soy milk and water and stir until smooth. 4. Add chocolate and gently fold through the mixture. 5. Heap large dessert spoonfuls onto a lightly greased baking tray and cook for 12-15mins on 180 degrees until lightly browned.
