 For those of you who ache to make vegan marshmallows in the comfort of your home, Angel Food out of New Zealand has put together a do-it-yourself kit.

 

Included in the kit are the majority of the ingredients needed to make the marshmallows. The kit lists the other ingredients and equipment required, the most important of which is a candy thermometer. The thermometer will set you back around AUD$10, depending on where you buy it. Be sure to read the list closely as you will not be able to make the marshmallows without these items.

They are quite fiddly to make, not simply because of the organisation involved, but the mess and the need to adhere exactly to the rises and fall of the temperatures of the cooking sugar and ingredients. The kit came with an extra print-out listing new directions to follow, which turned out to be important indeed. If in doubt, there are helpful video instructions on the Angel Food website.

It is recommended to choose the container you set the marshmallows in wisely, as a lack of planning will result in oddly-shaped marshmallows. Be aware that you will need a large amount of out-of-the-way surface space to store them while they set (must be left out for 24 hours). They will keep for some time but you must store them in an airtight container in a dry place, otherwise they will gain more moisture and become less than desirable.

No slackness with measurements should be in play here, if you follow it exactly you will end up with great results. The kit makes an enormous quantity of marshmallows, which will keep you in stock for a while or go down well if you intend to invite several hot chocolate fanatics over. They do not dissolve in hot beverages, but bob in them rather nicely and have an agreeable marshmallow-like consistency and texture if done correctly. The flavour is fantastic and deliciously sweet, just like the original non-vegan kind.
